Origin
Shiraz is sourced from old vineyards in the Krondorf and Marananga regions; Grenache from old, 50-60 year old bush vines from the Stockwell and Krondorf regions; and Mourvèdre from old bush vines – the oldest over 100 years old – from the Light Pass and Krondorf regions. A high diurnal temperature variation slows the ripening process.
Producer
After spending 29 years as a winemaker with Penfolds – one of Australia’s most famous wineries – John Duval founded his own eponymous wine label in 2003. John had already made a massive name for himself; as chief winemaker at Penfolds he picked up prestigious awards at the International Wine Challenger and International Wine and Spirits Competition, including “Winemaker of the Year” in select categories on 3 occasions.
Grape Variety
51% Syrah/Shiraz , 32% Grenache/Garnacha, 17% Mourvèdre
Red varietals are fermented with the juice and the skins of the grape; by using a submerged cap, this keeps the skins below the surface of the juice and therefore allow greater extraction of colour and tannins. The wine is matured and aged in a mixture of oak barrels, 10% new French oak and 90% 3-6 year old barrels, for 15 months.
Food Match
Would work well with bold dishes such as duck with a sweet sauce, generally Chinese style cooking and mildish lamb curries.
