Origin
Saint-Véran is a village in the heart of the Mâconnais, in southern Burgundy – the second in the area (after Pouilly Fuissé) to be given its own Appellation. Terres Noires is a single vineyard on the south-side of the landmark rock of Solutré, with limestone mixed with a black decomposed rock; exposure to sunshine and winds that help to moderate temperatures aid the ripening process.
Producer
Domaine des Deux Roches one of the top Mâconnais estates. Owned by two families, Collovray and Terrier, their eponymous company owns various domains in Burgundy and further south in Languedoc. In 2009, the Domaine began a transitional move to organic farming methods.
Grape Variety
100% Chardonnay.
One third of this Chardonnay is matured in oak barrels for four months and it is this careful use of oak that is key to the style – a wine that is clearly a big step up from the average Mâcon, with immense drinkability.
Food Match
Works well with soft cheeses such as goats cheese, seafood, shellfish, white meats & poultry.
