Origin
Franschhoek is a near neighbour of Stellenbosch and as highly regarded for its defined and refined wines. Cool breezes in the hot summer months moderate growing conditions to produce ripe but balanced red and white wines. Chamonix is now one of Platter’s (“South Africa’s Parker”) regular 5 star award winners.
Producer
Cape Chamonix Wine Farm has a long history, once forming part of the historic Huguenot Estate which dates back to 1688. Now under the expertise of German-born entrepreneur Chris Hellinger, over the past two decades Chamonix has stormed onto the world stage as a well respected winery in its own right. The farm employs a number of sustainable practices, including the use of organic compost and mulch which is ploughed into the soil.
Grape Variety
100% Chardonnay.
Grapes – sourced from 24 year old vines – are handpicked, soft crushed and naturally fermented. The wine is then matured for 11 months in French Allier oak, only a small proportion of which are new.
Food Match
This is a rich and textural wine which will pair nicely with full bodied and flavoured white fish and meats. Spot on for chicken with a tarragon cream and mushroom sauce (with or without the pastry!)
