Origin
A Valpolicella “Classico”, but because it’s bottled under screw cap the Italian authorities controversially decree that the term “classico” cannot be used! Grapes are sourced from the area referred to as Valpolicella Classico, a sub-region of Valpolicella, the original zone before the region was expanded eastwards towards Soave. Vineyards sit in a specific area within the boundaries of just 5 towns, where in the Monti Lessini foothills grapes are sourced from altitudes of up to 450 meters – a favoured location for producing high quality Valpolicella blends.
Producer
The Allegrini family estate covers 100 hectares of vineyard in the heart of the Valpolicella Classico area, a prominant producer who have been growing grapes here for six generations. The producers train their vines using two different methods: the older vineyards used the pergola Trentina system while the newer ones use the Guyot system, which allows greated vine density.
Grape Variety
70% Corvina , 30% Rondinella
Harvested grapes are destalked and crushed, before fermentation at controlled temperatures which occurs in stainless steel tanks. 9 day maceration and malolactic fermentation follows, the wine kept in stainless steel tanks for 2 months then bottled and kept for an additional 2 months.
Food Match
It does work with well with a good pizza – or lasagna! Excellent with a roasted loin of pork – and the surprise red wine which can work with the Christmas turkey. Best served cool, leave for 20 minutes in the fridge.
