On release the Cabernet Franc shows a deep ruby mulberry colour and intense bouquet with scents reminiscent of bellpepper, red berries, spice and cigar box. A wine of ample structure fills the mouth with concentrated fruit and berry sensations.

Origin

Franschhoek is a near neighbour of Stellenbosch and as highly regarded for its defined and refined wines. Cool breezes in the hot summer months moderate growing conditions to produce ripe but balanced red and white wines. Chamonix is now one of Platter’s (“South Africa’s Parker”) regular 5 star award winners.

Producer

Cape Chamonix Wine Farm has a long history, once forming part of the historic Huguenot Estate which dates back to 1688. Now under the expertise of German-born entrepreneur Chris Hellinger, over the past two decades Chamonix has stormed onto the world stage as a well respected winery in its own right. The farm employs a number of sustainable practices, including the use of organic compost and mulch which is ploughed into the soil.

Grape Variety

100% Cabernet Franc.

Grapes come from two plots with soils of calcareous clay and loam, at an altitude of 350 to 400 meters above sea level. The vines of an average age of 17 years. After malolactic fermentation the wine of about 14.5% alcohol matures for 18 months in 228ℓ small French oak barrels.

Food Match

Pair with more delicate red meat cuts – e.g rack of lamb – oven roasted with a red currant sauce. Fine partner to the new game season selection, eg roasted partridge and/or quail.
