Origin
Moscato grapes are sourced from the Riforno vineyard in Mango, above the Tanaro river and part of the Moscato d’Asti appellation. The 2.5 hectare vineyard is south-facing and planted on a very steep slope; at 420-470m above sea level, the high altitude serves to preserve the acidity of the grape, which balances the sugar content, and the extended ripening periods develops the complexity of the juice.
Producer
Based in Piedmont, north-west Italy, G.D. Vajra was established in 1972 by the then teenager Aldo Vajra – named after his father, Giuseppe Domenico – reclaiming the family-run vineyards since they were taken over by share-croppers after World War II. Over the years Aldo has increased area under vine – now up to 40 hectares of extensive holdings in Fossati, La Volta and Coste di Vergne.
Aldo employs his two sons and a young work force, adhearing to traditional winemaking methods, adapting them to modern winemaking technology and combining with new techniques to produce a cutting edge selection whilst respecting and celebrating tradition.
Grape Variety
100% Moscato.
Once ripened, the grapes are hand-picked and sorted. Fermentation occurs over a limited period under pressure in stainless steel tanks, stopped to preserve the natural grape sugars and gentle effervescent quality.
Food Match
Excellent accompaniment to cake (try it with a classic Victoria sandwich), simple fruit salad, or works brilliantly with a classic vanilla Panna Cotta.
