Chamonix Reserve 2014, a stunning take on a classic white Bordeaux blend

Cape Chamonix Wine Farm once formed part of the historic Huguenot Estate which dates back to 1688. Now under the expertise of German-born entrepreneur Chris Hellinger, over the past two decades Chamonix has stormed onto the world stage as a well respected winery in its own right.
Boasting some of the highest planted vines in the Cape Winelands, Chamonix has around 50 hectares under vineyard. The farm is blessed with cool breezes during the hot summer months and stony, clay-rich soil, giving the wines their unique personality and style. A philosophy of minimal intervention and environmentally conscious farming methods are just some of their secret ingredients.
A blend of barrel fermented and lees aged Sauvignon Blanc (70%) and Semillon (30%) – all the fruit is hand-harvested. Organic compost and mulch are ploughed back into the soil, whilst the use of green-harvesting (dropping bunches of grapes to reduce yields) ensures both concentration and elevated varietal character.
The style itself replicates that found in the top dry white Bordeaux of the famous Pessac-Léognan Appellation.
This wine would work well with fleshy white flat fish, with butter lemon and capers. Also lemon and thyme roasted chicken. Or try with a fennel, lemon and roasted pine nut salad.
