Origin

The ‘Pays d’Oc’ refers to the Languedoc-Roussillon region of southern France. Geographically the Oc covers an incredibly broad swathe of vineyards from the Rhône delta in the middle of southern France to westernmost tip of France’s Mediterranean coast. This is the most traditional area in France for the production of pale and red berry rosés, based mainly on the classical varieties of Grenache (Noir) and Cinsault.

Producer

A joint venture, this particular wine is made by Eric Monnin – Boutinot’s winemaker responsible for the Languedoc region. He works closely with local vignerons, advising them on how to produce the best crop, while constantly sourcing the area’s best wines and parcels. In the process he has formed long standing relationships – and formal partnerships – with a number of these which bodes well for future releases.

Grape Variety

As is often the norm in this area, a blend of Grenache and Cinsault.

The key to producing the best rosé here is the selection and blending of the best ‘batches’. Winemaker-in-chief Eric Monnin tastes the wines from each vat once fermentation has finished, to decide which styles should be selected and blended. This time round, he has cleverly captured the fruit and spice character of these grapes, whilst keeping the wine relatively delicate and rounded.

Food Match

So many options with this fantastic wine – Chill and enjoy as a aperitif, or with salads ( especially good with a shaved fennel bulb, fennel seeds, dill and lemon salad), BBQ grilled salmon (or even better sea trout) with new potatoes.
