Vineyards totaling 16 hectares are located in prime areas including Santenay, Maranges and Chassagne-Montrachet. The grapes sourced for this wine come from the latter; Chassagne Montrachet is, of course, one of the great, historic names in the white wine world. The vines were planted in the most part between 1935 and 1955, carefully nurtured year after year.
The Domaine Bachey-Legros is an old family run estate centered in the picturesque village of Santaney-le-Haut, which started out as grape growers in the 19th Century under François Bachey. 6th generation Christiane and her two sons Samuel and Lénaïc have run the Domaine since 1993. They produce wine on a small scale, around 7,000 cases a year.
The ethos of the Domaine is very much on the use of “old vines” – or Vieilles Vignes – with many vineyards parcels being in excess of 60 years of age. The wine is aged in French oak barrels (20% new) in its lees for 14 months. The Premier Cru single vineyard Morgeot is regarded as one of the finest in the Village.
Wines of this power and texture require full bodied and classical food pairings. Will work perfectly with any white fish served with a butter/ hollandaise sauce, equally with loin of pork, roasted chicken and especially well with roasted guinea fowl. The big surprise is with mature and nutty white cheeses (but not blue).
